Bacalao and Cured Tuna
Bacalao salt cod and mojama tuna came to our attention way back in 2003, two seafood products that we had never seen before in the UK and with an intriguing appearance and delicious flavour. Since then you have been enjoying full bacalao salt cod from our local fishmonger in Orce and Mojama air dried tuna from a small family producer on the Andalucian coast. Now though, you can now explore a new ‘tapas’ range of cured seafood from your gourmet seafood range. Convenient 100g packs of sliced cured fish are now available as well as a delicious trio of flavours from the ocean with a complimentary wooden serving board for presentation.
New to the range comes the prestigious ‘Bonito’ tuna, choose from exquisite full tenderloins or hand sliced loin which make ideal tapas straight from the pack and we have also introduced a tremendously impressive bacalao ‘centro’, a butterflied salt cod minus the trimmings leaving two deliciously plump loins for your traditional Spanish cooking.
Mojama is also now available in the usual full pieces or ‘barras’ as the Spanish call them and also in 100g packs for convenient serving. Known as ‘jamon of the sea’ it is easy to see why mojama tuna has adopted this name as once you have tasted this fish for the first time you will be in the middle of a truly gastronomic Andalucian experience! Flavours are bossy and texture sublime making mojama a truly gourmet experience, a popular tapa served in Madrid traditionally with a short beer at lunchtime. Mojama can also be served marinated in olive oil – make sure you use a good, preferably spicy extra virgin, pour into a terracotta tray (just enough to cover) and slide in some thin slices of fish. Once left for an hour or so serve with fresh crusty bread and some ripe vine tomatoes for a truly classic Spanish light lunch or gourmet starter.

Meet Antonio – a glazier by trade but who also runs one of the two fish shops in Orce village. Our preferred fish monger who we have grown to know and like since moving to Orce, Antonio is always full of great advice, recipes, enthusiasm and someone who creates one of the most impressive fish counters in such a small shop you would almost think you were at the coast itself or a your local supermarket fresh fish counter. Antonio (pictured right) introduced us to bacalao way back in the early days where he came around to let us sample some if his products.
Straight from the back of the van Antonio carefully carves off slithers of bacalao and bonito tuna for us to taste while proudly boasting that he only buys in the very best during his visits to the coastal fish markets twice weekly. Having such local knowledge at our disposal has ensured that only the finest cured fish make the grade and it is always good to support the local small businesses that make the availability of such hand picked products possible.
