An impressive piece of full salt cod prepared in the same traditional way from times when salt was the only method of preserving. The fish comes complete with skin for an intense authentic flavour and the flesh is firm but gently flaky on cooking. Soak in the fridge for 24 - 36 hours changing the water two or three times and use to create some of the best known fish recipes in Spain.
