hams from Andalucia come from the hind leg of the pig. The hoof
and skin remain and each ham weighs in the region of 7.5 kg. The
curing time varies with each ham ranging from a minimum of 12
months up to 18 months for the Serrano and 24 months plus for
the extra special Iberico hams.
