VINEGARS
Capirete
Jerez vinegar is produced only in "Jerez de
la Frontera", in the region of Andalusia. While
the weather is hot and dry, the ocean breeze brings
fresh air continuously, a major component for the
production of Jerez vinegar.
Another
unique aspect of production is the system used for
maturation. This system is called "Solera",
which consists of a series of rows of American oak
barrels each barrel containing 500 litres of vinegar
with similar characteristics but different ages.
All these barrels previously contained Sherry wine
and have therefore absorbed many components of the
wine that contribute to the taste, smell, colour
and ageing of Jerez vinegar.
