SERRANO HAMS

Cured hams from Andalucia come from the hind leg of the pig. The hoof and skin remain and each ham weighs in the region of 7.5 kg. The curing time varies with each ham ranging from a minimum of 12 months up to 18 months for the Serrano and 24 months plus for the extra special Iberico hams.

This speciality jamon reserva is cured in the village of Orce for 16 months. Weighing approximately 7.5kg - 8kg these hams are both succulent and aromatic with a fine texture and mature flavour. Hung high up on knotted rope the old fashioned way for nearly two years this ham possesses a texture unlike any other. A lovely piece of vacuum packed flavoursome Serrano ham, around 1.5kg in weight this ham piece comes from our 24 month cured reserva. The "Babilla" is the meat from the top of the leg, once the ham is hung for curing this part of the leg acquires slightly more salt so the flavour is slightly stronger. Easy to carve for the perfect tapa, goes very well with deep reds or fino sherry.

Serrano Ham Dulce (low in salt)
From Jamones Granadul in the Andalucian town of Guadix come these unique, artisan, aromatic and textured Serrano hams. Naturally cured in the Sierra Nevada mountains these hams are low in salt due to a unique curing process resulting in a truly exquisite flavour. Only the female hogs are used and each ham is carefully tended to for up to two years. Grades are distinguished by curing time with the reserva at 14 months and the grand reserva at 18 months, there is also the choice of a very special and old example cured for 24 months. A premium Spanish ham for the discerning gourmet. 7.75kg - 8.25kg approximately, 100% natural with no additives.

Orce Reserva Boneless
A boneless ham for the discerning gourmet direct from rural Andalucia. This prime example of Orce reserva ham has been cured for 15 - 16 months and has had the full bone removed, the result is a highly textured ham with appealing excellence. Comfortable to carve and vacuum packed this ham can be refrigerated and comes to you in 5kg, 6kg and "half ham" size options.
