SERRANO HAMS

Cured hams from Andalucia come from the hind leg of the pig. The hoof and skin remain and each ham weighs in the region of 7.5 kg. The curing time varies with each ham ranging from a minimum of 12 months up to 18 months for the Serrano and 24 months plus for the extra special Iberico hams.

A lovely piece of vacuum packed flavoursome Serrano ham, around 1.5kg in weight this ham piece comes from our 24 month cured reserva. The "Babilla" is the meat from the top of the leg, once the ham is hung for curing this part of the leg acquires slightly more salt so the flavour is slightly stronger.
