SPANISH
VEGETARIAN RECIPES
Think
Spanish recipes and vegetarian cuisine may not immediately
spring to mind however there are many Spanish vegetarian
recipes . . . take the classic gazpacho, certainly Spains
most famous soup. The tortilla de patatas or
Spanish omelette is another good example.
Many
Spanish vegetarian recipes have been born from the campo
where workers would make dishes such as poor mans
potatoes or vegetable based stews using dried beans
or lentils.
Gourds
are also very popular in Spanish cooking, pumpkin soups
boast earthy flavours from the use of paprika and herbs,
butternut squash is usually roasted and stuffed and escalivada
or barbequed peppers, tomatoes and onions is a real delight
drizzled in olive oil.
