FROM SPAIN:
Serrano
Ham with Vine Tomatoes
This
simple dish uses the most famous and versatile of typical Andalucian
ingredients. Ideal at any time of the day, on any occasion whether
for breakfast, a tapa, aperitif, starter or part of a Spanish
buffet. Bring warmth and sunshine to your table with this delightful
taste of Spain.
You
will need:

- 8 thin slices of Serrano Ham
2 - 3 medium ripe tomatoes
Fresh crusty bread
Extra Virgin Olive oil
Fresh herb of your choice (basil, sage, parsley, oregano)
Salt and pepper to taste
Method
- Arrange
the Serrano ham onto a plate.
- Slice
the tomatoes and add to the plate.
- Finely
chop the herbs and sprinkle over the tomatoes
- Drizzle
with olive oil and season with salt and pepper
- Serve
with fresh crusty bread.
You
can add olives, almonds and Manchego cheese to this dish to make
a truly spectacular tapas selection or buffet centrepiece.
