Serrano
Ham and Tomato Salsa
A
truly delicious tapa using the most traditional Spanish ingredients
and a great way to use your Serrano ham as you get towards the
end.
You
will need:
200g
Serrano Ham cut into cubes
1 medium onion
6 cloves garlic
5 medium ripe tomatoes
Olive oil
Hand full chopped parsley
Salt
Method
- Peel
the garlic and onion and chop as small as you can.
- In
a large frying pan, heat a little olive oil, add the onion and
garlic and cook gently until they begin to soften.
- Add
the diced Serrano ham to the pan, and cook for a few minutes.
- Chop
the tomatoes into small pieces and add to the pan.
- Cook
on a high heat for a few minutes, add the chopped parsley, stir
and reduce the heat.
- Cook
gently for about half an hour until the sauce has reduced.
- Check
the seasoning, but don't add too much salt as the ham will add
salt of its own.
- Serve
on small tapas dishes with fresh bread.
