RECIPE
FROM SPAIN:
Octopus
Salad
There's
nothing better than fresh seafood, especially in a salad during
the summer months. Buy a precooked octopus tentacle from your
local fish shop (they are not expensive at all) to create a delightful,
refreshing Andalucian style salad.
You
will need:
2
pre-cooked octopus tentacles
1 small tin sweet corn
2 large tomatoes
1 Iceberg lettuce
1/2 cucumber
Tin Artichoke hearts in vinegar
1 small red pepper
1 small green pepper
Green olives
Olive oil
Method
- Wash
the octopus tentacles and slice thickly
- Wash
and dry the lettuce and slice
- Chop
the tomatoes into large chunks
- Peel
the cucumber roughly and slice thickly
- Wash
and chop the green and red peppers into small chunks
- Cut
the artichoke hearts into four
- Mix
all the ingredients together in a large salad bowl, or on a
large serving dish then add the sweet corn, mix again and drizzle
with a little olive oil and top with the olives.
Makes
a great summer lunch or evening starter.
