RECIPE
FROM SPAIN:
Mediterranean
Beef Salad
A
delicious way to serve any cold beef, left over from Sunday lunch!
Makes a fresh summer salad.
You
will need:
Piece
of cold beef
1 medium sized tomato
1 small onion
1 small jar capers (optional)
For
the dressing:
175ml olive oil
100ml white wine vinegar
1 tablespoon strong mustard
1 clove garlic
Salt and pepper
1 tablespoon clear honey
Method
- Shred
or finely chop the beef and onion
- Place
in a bowl with the capers (if using) and mix well
- Prepare
the dressing, Peel and crush the garlic and place into a small
jar with the oil, vinegar, honey, mustard salt and pepper
- Close
the lid tightly and shake well until all the ingredients are
mixed well
- Drizzle
the dressing over the beef and serve
