RECIPE
FROM SPAIN:
Brochetas
de Carne con Legumbres
A
firm summer favourite, tender meat kebabs and seasonal vegetables.
You
will need:
2
chicken breasts
1/2 kilo of pork tenderloin
6 medium tomatoes
2 large red peppers
2 medium onions
4 green peppers
1/2 kilo mushrooms
Method
- Cut
up the chicken into bite sized pieces and leave to marinade
in the fridge in a little olive oil, lemon juice and thyme for
2 - 3 hours, do the same with the pork.
- After
2 - 3 hours, prepare the vegetables, wash and chop up into bite-sized
pieces as with the meat.
- Begin
making the kebabs, alternating the vegetables and the meat.
- Cook
on a BBQ for about 20 - 30 minutes, turning frequently until
the meat is cooked through and tender.
