FROM SPAIN:
Andalucian
Fried Squid
A
very popular dish served in bars and restaurants in Andalucia,
especially along the coast. Light and fresh it is perfect for
a quick, healthy lunch.
You
will need:
3
- 4 whole squid
Tip of a dried chilli pepper, finely chopped
Olive oil
Flour
Salt and pepper
Handful fresh parsley
Method

Clean the squid under running water. Next pull the head away
from the body, cut in half and pull out the beak and bone.
- Then
slice up the squid into rings.
- Dust
the squid with flour, shaking off the excess.
- Heat
a little oil in a frying pan or large cazuela, add the chopped
chilli and cook the squid for about 10 minutes until it is white
and fleshy but still tender.
- Serve
on a plate with tomatoes, season with salt and pepper, add a
generous drizzle of olive oil and garnish with chopped parsley.
