RECIPE
FROM SPAIN:
Lomo
and Apple Bake
You
will need:
750g
lomo (pork tenderloin) cut into slices about 1.5cms thick
1 large granny smith apple
1 medium onion
2 teaspoons brown sugar
Small piece of a cinnamon stick
2 tablespoons cider vinegar
150ml apple juice
Salt and pepper
Method
- Lightly
grease the bottom of a casserole dish or earthenware cazuela
and layer the pork slices on the bottom, it doesn't matter if
they overlap a little.
- Peel
and core the apple and cut into thin slices, then peel and thinly
slice the onion.
- Layer
the onion and apple slices on top of the pork then add the sugar,
cinnamon, vinegar and apple juice.
- Season
with salt and pepper, cover and bake in a very low oven for
about 3 hours until the pork is tender.
