RECIPE FROM SPAIN:

Cool Yoghurt DipCool Yoghurt Dip

A cooling, refreshing dip or salsa which is ideal as an accompaniment to barbecued meats and vegetables or other spicy dishes.

You will need:

1 pot natural yoghurt (no sugar added)
Handful chopped mint
½ cucumber
½ red pepper
Squeeze of lemon juice
Salt and pepper to season

Method

  • Wash the mint, shake dry and finely chop.
  • Wash the pepper and cucumber and chop as small as you can.
  • Put the yoghurt into a serving dish and mix with the cucumber and pepper.
  • Season with salt and pepper, add a squeeze of lemon juice then mix again and chill before serving.
