FROM SPAIN:
Squid
and Red Peppers
This
dish is a great way to use the squid tentacles if you are using
the body for another dish. Quick, easy and full of flavour it
is a very popular tapas dish.
You
will need:
3
or 4 squid tentacles
1 medium red pepper
1 clove garlic
Salt and pepper
Method
-
Clean the tentacles and cut into bite sized pieces, then season
with salt and pepper.
- Peel
and crush the garlic and gently cook in hot olive oil until
slightly golden.
- Add
the squid to the pan with the garlic.
- Cook
for a few minutes until tender and a gently golden brown colour.
- Serve
with slices of red pepper and fresh bread.
