FROM SPAIN:
Golden
Roast Potatoes
The
best way to achieve, crispy golden potatoes is to use natural
Iberian Lard. This is a great alternative to goose fat as it gives
the potatoes a delicate flavour and they do not absorb the fat,
making them really crispy and delicious.
You
will need:

- 4 medium potatoes
200g Iberian Lard
Salt
Method
- Peel
and wash the potatoes and cut into quarters then cook in salted
boiling water for about 10 minutes until just tender.
- Meanwhile
put the lard into a roasting tin and place in the oven, turn
the oven to high.
- Drain
the potatoes and put the pan back on the heat for a minute or
so to allow the potatoes to dry out. Put the lid on the pan
and shake a few times to fluff up the potatoes and season with
salt.
- Tip
the potatoes into the roasting tin with the hot, melted lard
and shake so that the potatoes are covered all over with the
lard.
- Roast
for 30 - 40 minutes until golden brown, basting a couple of
times during cooking.
Serve
as an accompaniment to a roast dinner or even just on their own
as an indulgent snack.
