RECIPE
FROM SPAIN:
Beef
with Sage and Tomatoes
A
lovely dish with great flavours ideal for cooking on the BBQ.
Serve with boiled new potatoes and salad for a lunchtime treat.
You
will need:
4
small fillets or beef steaks
6 tablespoons of olive oil
100ml balsamic vinegar
350 g cherry tomatoes
20 fresh sage leaves
2 cloves garlic
Salt and pepper
Method
- Rub
the beef with oil and season both sides.
- Over
a low heat cook the vinegar until it has reduced and brush the
beef a little vinegar again on both sides.
- Brush
the cherry tomatoes with oil and grill or barbecue until the
skin goes a little black and peels slightly. Grill or barbecue
the beef at the same time until nicely golden on both sides
and cooked to your own preference.
- While
the beef and tomatoes are cooking, peel and crush the garlic
and add to the reduced balsamic vinegar, add the sage leaves
to the pan and return to a low heat, cooking just long enough
to warm through.
- Serve
the beef fillets with the cherry tomatoes and a drizzle of the
sage and garlic vinegar sauce.
