Barbecue Lamb Chops
A
really simple recipe for lamb chops which can be prepared well
in advance. Lovely aroma and taste of warm summer evenings.
You
will need:
1
kilo lamb chops (use chops from the leg or loin chops)
1 medium onion
Glass red wine
Good handful fresh parsley
Small sprig fresh mint
1 tablespoon olive oil
Method
- Peel
the onion and chop as finely as possible.
- Finely
chop the parsley and mint.
- Place
the onion and herbs into a bowl then add the onion, wine and
olive oil. Mix well and season.
- Place
the chops into a large shallow dish and pour over the marinade
ensuring all the meat is well covered.
- Cover
and refrigerate overnight turning the meat occasionally.
- Cook
the chops over the bbq for 5 minutes or so each side or until
cooked as desired.
