Herby Barbecue Lamb ChopsHerby Barbecue Lamb Chops

A really simple recipe for lamb chops which can be prepared well in advance. Lovely aroma and taste of warm summer evenings.

You will need:

1 kilo lamb chops (use chops from the leg or loin chops)
1 medium onion
Glass red wine
Good handful fresh parsley
Small sprig fresh mint
1 tablespoon olive oil

Method

  • Peel the onion and chop as finely as possible.
  • Finely chop the parsley and mint.
  • Place the onion and herbs into a bowl then add the onion, wine and olive oil. Mix well and season.
  • Place the chops into a large shallow dish and pour over the marinade ensuring all the meat is well covered.
  • Cover and refrigerate overnight turning the meat occasionally.
  • Cook the chops over the bbq for 5 minutes or so each side or until cooked as desired.
