Beef Rib in Beer
Rib
of beef is a really economical cut and is delicious when
slow cooked. This Spanish recipe for beef rib with beer
is a really social dish and is a great family meal for beating
the winter blues.
You
will need:
1
beef rib cut into chunks
4 medium potatoes peeled and sliced
2 onions peeled and sliced
3 green peppers sliced
6 cloves garlic, squashed with the skins still roughly
on
Generous sprig of thyme
Olive oil
2 x 330ml cans Spanish beer (Mahou or San Miguel)
Salt and pepper
Method
- Pour
a little olive oil into a deep roasting tin or oven proof
dish and add the beef chunks, turning over to ensure a
good covering.
- Add
the potatoes, garlic, onions and peppers, mixing well.
- Pour
over the beer which will froth a bit but will settle down,
season with the thyme, salt and pepper and place in a
low to moderate oven for 2 - 3 hours.

Add a little water during cooking if necessary, the beef
will be cooked when it falls off the bone.
- The
best way to serve is to do as the Spanish do, even when
this dish is eaten in a restaurant. Simply place the dish
in the middle of the table along with plenty of fresh
bread (and chips which are a very popular accompaniment).
Everyone then can just dive in and help themselves.
