Spanish
Chorizo and Calamari Salad
If
you enjoy seafood and have a passion for Spanish chorizo
then this simple healthy salad is a real Mediterranean treat.
Packed with flavours from Spain the chorizo compliments
the calamari with a mild spiciness topped with extra virgin
olive oil - a light and healthy summer salad.
You
will need:
3
Large whole squid
1 Good bunch baby spinach leaves
150g Sliced chorizo sausage
Extra virgin olive oil
Method
- Wash
and clean the spinach leaves and place in a large bowl
or cazuela.
-
Clean the squid, remove the heads and cut the body into
large squares score the meat to create a nice cris - cross
effect for presentation.
- Thinly
slice two chorizos.
- Fry
the squid and chorizo in olive oil for 5 - 6 minutes.
- Place
over the spinach leaves.
- Drizzle
with extra virgin olive oil and salt and pepper to taste.
