Wilted
Spinach and Serrano Ham Salad
Serrano
Ham and spinach are a great combination and this recipe
for Serrano ham salad with spinach is light yet satisfying.
Great as a starter or as a summer's lunch.
You
will need:
1
bunch fresh spinach
1 onion
2 tomatoes
4 thick slices Serrano ham, cut into pieces
Olive oil
White wine vinegar
Salt and pepper
Pinch hot smoked paprika
Method

Prepare the spinach. Wash in cold water, drain well and
pat dry with kitchen paper, then roughly chop.
- Peel
and dice the onion and dice the tomatoes.
- Place
the onion, tomatoes and spinach into a large serving bowl
and mix.
- Add
a splash of white wine vinegar, season with salt and pepper
and mix again.
- Heat
a little olive oil and fry the Serrano ham until dark
and crispy, then add the ham to the rest of the salad
and toss well.
- Pour
over the oil from the pan which will help wilt the spinach
nicely and then top with a sprinkle of paprika.
Serve
with a really chilled glass of dry fino sherry or even a
semi sweet Diamante white Rioja.
