Serrano
Ham and Bean Tostada
A
simple and surprisingly satisfying tostada. Great at anytime
of the day.
You
will need:
3
tablespoons drained white fava or cannelini beans (from
a jar or tin)
4 thin slices of Serrano Ham cut into strips
1 teaspoon wine vinegar
1 tablespoon olive oil
1 tablespoon minced onion
½ teaspoon sweet paprika
French toasts or toasted baguette cut into individual
sized servings
Salt and pepper to season
Method
- In
a mixing bowl, place the beans and roughly mash with a
fork, add the oil, vinegar, paprika and onion, mix well
and season.
- Spoon
generous amounts of the bean mix onto the toasts and top
with a few Serrano ham strips.
- Garnish
with a little fresh parsley and serve. Lovely with a chilled
white to start off the evening.
