Serrano
Ham and Sausage Patties
A
really great dish which is fun to make and to eat! One of
our favourite teatime treats served on hash browns with
green salad which makes a change from the usual burger -
Serrano Ham adds a nice Spanish twist.
You
will need:
For
the patties:
3 large pork sausages, skins removed
½ apple, peeled and finely chopped
Fresh ground pepper
3 or 4 thin slices of Serrano
ham
For
the hash browns:
1 potato, peeled and grated
1 egg, beaten
3 tablespoons plain flour
Salt and pepper
Method
- First
make the hash browns by placing the grated potato in a
bowl lined with a clean tea towel and squeeze out as much
liquid as you can with the towel. Alternatively, pass
the potato through a ricer to remove the liquid.
- Then
put the potato into another bowl with the egg and seasoned
flour, mix well and make into 3 or 4 flat hash brown cakes.
- Heat
a little olive oil in a large frying pan and cook the
hash browns for a few minutes each side until golden.
Remove and place in the oven to keep warm.
- Now
make the patties. Mix the sausage meat with the apple
and pepper, shape into three or four burgers and wrap
each burger with a slice of Serrano ham.
- Heat
a little more oil in the frying pan and cook the burgers
for about 5 minutes on each side until cooked through
and golden.
- Place
the hash browns onto a plate with a slice of tomato on
top, add the patties and serve with green salad.
