Sobrasada
with Beans and Manchego
Sobrasada!
This round spreadable sausage from Mallorca is a favourite
with many top class establishments and delicatessens. A
little known but gourmet class artisan creation, the sobrasada
is most frequently enjoyed on toast, with cheese or drizzled
with honey.
You
will need:
150g
Sobrasada
400g Cooked white beans
1 Small onion (diced)
1 Garlic clove (crushed)
1 Large tomato (pureed)
3 - 4 Slices of Spanish Cheese
Olive oil
Method
- Sauté
onion and garlic in olive oil.
- When
the onion is brown add tomato and stir.

Add white beans and cook for 4 - 5 minutes.
- Place
the contents into a 16cm terracotta cazuela and spread
the sobrasada sausage over the top, then place the cheese
slices on top.
- Grill
for a few minutes until cheese is golden.
- Garnish
with parsley and serve.
