Avocado and Orange Salad

Avocado and Orange SaladThe key with this recipe is buy fresh and juicy oranges, accompanied with the avocado and olives this recipe boasts some real Spanish flavour with a Jerez twist to finish.

You will need:

3 Large Oranges
2 Large Avocados
250g Pitted olives (green or black / split Arbequine, Manzanilla)
6 Wafer thin slices of onion
Sherry vinegar
Olive oil

Method

  • Peel the oranges as cleanly as possible removing as much pith as possible, then cut into 1cm thick slices and lay in the base of a large cazuela.
  • Peel and slice the avocado and arrange on top of the oranges.
  • Slice the onion and sprinkle the wafer thin rings on top.
  • Add the olives.
  • Sprinkle lightly with sherry vinegar all over the platter.
  • Add a generous drizzle of extra virgin olive oil.
