Valencian
Skate Wings
A
very typical fish dish from the Valencia region of Spain
with a lovely light, sweet sauce. A favourite spring time
lunch dish.
You
will need:
2
skate wings
½ onion, peeled and sliced
2 tablespoons white wine vinegar
1 bay leaf
Teaspoon sweet paprika
Ground pepper
Pinch salt
For
the sauce:
1 tablespoon butter
½ onion, finely chopped
2 teaspoons clear honey
Small glass orange juice
Handful fresh parsley, chopped
Squeeze lemon juice
Method
- In
a large saucepan of water, add the onion, paprika, salt
and pepper, wine vinegar and bay leaf. Bring to the boil
and add the skate wings then reduce the heat and simmer
for 30 minutes.
- Remove
the skate from the pan, drain and remove any skin.
- Place
on serving plates, pour over the sauce and serve.
For
the sauce:
- When
the skate is almost done, prepare the sauce. Melt the
butter in a frying pan and add the onion, cooking gently
until soft and translucent.
- Add
the orange juice and honey and cook for a few minutes
before adding the parsley and a squeeze of lemon juice.
- Bring
to the boil and cook for a few minutes more.
