Catalan
Sausage and Plum Tomato Casserole
Catalan
sausage is bought fresh from the butchers. A large sausage
similar to the English Cumberland variety and ideal for
a good hearty casserole. As with all casserole meals the
recipe is very versatile. Here is our own plum tomato example.
You
will need:
6
large Catalan sausages
2 Large onions (roughly chopped)
1 Large red bell pepper (Chopped)
1 Garlic clove (crushed)
6 Large plum tomatoes
Broad/green beans (optional)
Thyme
Smoked
paprika
Crushed black pepper
Olive oil
Method
- In
a large pan or casserole dish brown off the sausages in
a little olive oil.
- Remove
sausages and sauté the onions, pepper, beans and
garlic on a high heat.
- Re-introduce
the sausages and add a little water and then the plum
tomatoes and thyme.
- Cook
for 40 minutes on a medium heat stirring occasionally.
- Add
a pinch of smoked paprika and black pepper.
- Cook
for a further 5 minutes then serve with mashed potatoes
or fresh crusty bread.
