Baked Cod
This
Spanish cod recipe is a lovely summer dish with delicate
flavours and aromas. It is very easy to make and great at
any time of the day. This meaty yet light dish is often
served in the restaurants in and around Orce village.
You
will need:
Half
kilo of fresh cod
150g of butter
150g flour
Salt & pepper
Paprika
Juice of half a lemon
Method
-
Melt the butter in a cazuela over a low heat and mix in
the lemon juice then remove from the heat.
- Put
the flour onto a large plate, season with salt and pepper
and mix well.
- Cut
the fish into large pieces and dip into the butter before
coating with the seasoned flour.
- Place
the fish into another cazuela adding the rest of the melted
butter then sprinkle with paprika.
- Bake
in the oven on a medium heat for about 30 minutes until
the fish flakes easily.
Serve
with salad and a good extra virgin olive oil
