Pork Chops and Caramelized Pears
We
all know pork and apple are a perfect pairing but what about
pork and pears? Here is a pork and pear recipe with a Spanish
twist - absolutely bursting with flavour but still very
simple at the same time.
You
will need:

Pork chops (1/2 inch thick)
2 Pears cut into thick segments
5 Garlic cloves (minced)
150ml Sherry or cider
vinegar
2 Large onions cut into wedges
Knob of butter
2 Tablespoons white sugar
Sprig rosemary or Thyme (Chopped)
Splash olive oil
100ml water
Method
- Mix
together the olive oil, water, herbs, garlic, salt, sugar
and pork chops in a cazuela and marinade for 2 - 3 hours.
- In
a cazuela reduce the vinegar by half until the consistency
becomes similar to syrup.
- In
a baking tray add the butter and cook the pears and onion
until browned and soft.
- Pour
in the reduction and add the pork chops, covering the
chops with the onion and pears
- Cook
in the oven for 40 - 50 minutes.
- Serve
the chops pouring a generous drizzle of caramelized reduction
over the top.
