Seared
Fillets of Bream in Garlic Butter
Bream
is a fish that goes well with stronger flavours, for this
recipe we used Gilthead bream fillets which, when coupled
with garlic butter work very well indeed. We tried this
recipe in a local Spanish restaurant, cooked to perfection
and a very tasty dish served up with fresh boiled potatoes,
roasted butternut squash and green beans.
You
will need:
4
Gilthead bream fillets
6 Garlic cloves
Large knob of butter
Splash olive oil
Cup of flour
Broadleaf parsley
Salt and Pepper
Method
- In
a large cazuela melt the butter and olive oil, add the
garlic cloves and fry on a low heat for 5 - 6 minutes
until garlic is browned.
- Season
flour heavily with salt and pepper and dust the bream
fillets.
- Fry
fillets in the butter oil for 3 minutes each side. Add
more butter if required.
- Remove
fillets and arrange on a plate.
- Pour
the garlic butter over the fish fillets, sprinkle with
parsley.
- Serve
with asparagus and boiled potatoes.
