Ham Salad with Almond Garlic Dressing
Serrano
ham works well in a huge range of recipes - particularly
Summer salads where it is simply sliced and mixed among
the ingredients to add a subtle not too salty flavour. Spanish
ham can be found in fruit salads as well as the more traditional,
here we have an easy to make serrano ham salad using garlic
and toasted almonds.
You
will need:
100g
Hand sliced
Serrano ham
1 Jar Piquillo peppers
3 Vine tomatoes
1 Small cucumber
1 Garlic clove
200ml Water
Pinch cracked black pepper
50g Blanched almonds
Drizzle of olive oil
Splash of sherry vinegar
Method
- Slice
the Serrano ham and leave to breathe.
- Place
the garlic, pepper, water, oil, almonds and vinegar into
a blender and blend into a paste, add more olive oil for
the desired consistency.
- Slice
the tomatoes and cucumber and arrange on a plate, place
the pequillo in the centre then curl the ham slices around
the base of the peppers to create a dome.
- Drizzle
over the almond garlic dressing.
- Garnish
with leftover almonds and serve with a cold white Rioja
Tip:
Add
some extra tang with a spoonful of chilli sauce or a few
drops of Tabasco in the dressing.
