RECIPE FROM SPAIN:

Stuffed avocado with Serrano Ham and Allioli

Stuffed avocado with Serrano Ham and AllioliStuffed avocados make healthy summer tapas and are very quick to put together. The addition of allioli with a sprinkle of paprika adds colour and flavour making these tapas a great addition to the Spanish table with a tasty twist.

You will need:

2 Avocados, halved
100g Hand sliced Serrano ham
1 Tub Allioli
1 Tomato, finely chopped
Extra virgin olive oil
Paprika

Method

  • Mix together the chopped tomato and diced serrano ham.
  • Place the mixture into the avocado.
  • On top of the mixture place a good spoonful of allioli.
  • Sprinkle the allioli with paprika.
  • Garnish with more serrano ham.
  • Drizzle olive oil around the edge of the avocado.
