Leeks with Serrano Ham and Manchego
This
recipe for Serrano ham wrapped leeks is a variation on a
tapas recipe made locally here in Orce village. More of
a "racione" or big tapa this dish is actually
three tapas served as one. Topped with herbs and Manchego
the flavour of the ham and the leek works exceptionally
well and provides a hot tapa that is both tasty and a little
different.
You
will need:
2
Leeks
300g Serrano
ham, sliced
200g Manchego cheese, grated
Oregano
Olive oil
Method
- Prepare
each leek by removing the outer skin then chop into three
equal lengths.
- Wrap
each leek with Serrano ham, approximately 2 slices will
wrap each piece.
- Place
each piece side by side on a baking tray and grate over
the Manchego cheese.
- Add
a generous sprinkle of oregano.
- Oven
bake at 180°C for 15 minutes or until tender.
