Peaches with Serrano Ham
Simple
Spanish tapas. Easy tapas doesn't mean skimping on flavour,
indeed tapas by their very nature are small bites of food
either from part of a stew or paella as found in many Spanish
bars to a combination of Serrano ham and almonds. Spanish
ham goes very well with fruit, the most popular being Serrano
ham and melon but there are more . . . try ripe kiwi, nectarine,
sweet oranges or grapes. For this tapas recipe we have used
halved peaches with a peppery twist.
You
will need:

Ripe peaches, halved, stones removed
12 Hand cut slices of Serrano ham
Cracked black pepper
Extra virgin olive oil
Method
- Cut
the peaches in half, remove the stones and using a small
knife cut out the pink inner core where the stone has
been.
- Slice
your ham (direct from the leg is better) into 10cm strips.
- Stuff
the cavity of each peach half with the ham slices.
- Sprinkle
generously with freshly ground peppercorns.
Flavour
Tip:
If preparing this easy recipe for quite a few people we
would recommend slicing the ham a good hour before to
let the slices breath and sweat - this intensifies the
ham's flavour. Place the peach halves in the fridge so
that they can be served cold. The combined saltiness of
the ham and sweet peach is delicious. Accompanied by a
slight kick of freshly ground pepper and a grassy extra
virgin olive oil adds nice depth to something very, very
simple.
