as it is flavour. These hams are truly aged starting life
as a large ham they lose 35% of their uncured weight during
the two years they are hung. The result is a grand reserva
ham which has an exquisite texture once opened with an outer
layer of delectably cured mature fat. The balance of flavour
in these hams could be described as unique as the Anejo, although
cured for two years is not as strong as you may assume, it
is the texture of these old hams and the aroma that characterise
this exceptional gran reserva.
For
the serrano ham connoisseur the Anejo will deliver on all
levels, each leg is personally picked by hand and tested
prior to our acceptance ensuring that you receive one of
the very finest serrano hams from Spain. Naturally cured
from family business Granadinos in the town
of Baza. Specially aged hams with the Spanish

Flavour
notes & gastronomy:
Mild
yet mature, exquisite depth and aroma, aged. A ham for balanced
flavours and enhancing cold dishes such as salads or enjoyed
with good reserva reds. The Anejo needs little encouragement
and will head the show on any plate, good with a bossy cheese,
spicy extra virgin, orange or salted almonds to name but
a few. Leave slices to breathe for 15 minutes to enhance
flavour.

Storage:
Store in a cool, dry place. Once cut into your gran reserva
ham will last up to 7 weeks, rub extra virgin olive oil
over exposed meat to prevent drying out and cover.
