weekly direct from the curing house where it has been slowly
curing for 14 months. Situated 3000 feet above sea level in
the Sierras mountain range these Serrano hams are cured naturally
in fresh, crisp air for just the right amount of time. The
curado or bodega ham is a great all rounder and
performs just as well in the kitchen as on its own with complimentary
flavours, this Serrano ham though is best left to its own
devices simply served with a good olive oil, bread or cheese
and wine.
For
those who enjoy a little more fat on their ham the curado
delivers a nice layer on the outside with a delectable moist
meat through the leg. From the Torrente secadero

Flavour
notes & gastronomy:
Mild
flavour and aroma, reserva texture with brilliant white
fat. Adds flavour to both fish and chicken dishes but where
this ham performs best is with simple accompaniments such
as fruits, cheeses and red wines. A generous but not too
high fat content makes the curado moist and creamy on the
palate with a delectable texture. Carve thinly and leave
to breath for 10 minutes at room temperature for best results.

Storage:
Store in a cool, dry place. Once cut into your Curado ham
will last up to 5 weeks, smear extra virgin olive oil over
exposed meat to prevent drying out and cover.
