Ovalo have been in business for four generations
and are currently a Father and son team based in the Granada
town of Huescar. The town lies in the shadow of La Sagra,
the highest mountain in the Altiplano and creates a micro
climate ideal for traditional ham curing, so traditional in
fact that these hams are still hand tied high up on knotted
rope as was done in days gone by.
The
Sagra Especial is a reserva Serrano ham and boasts a medium
to strong flavour, ideal for those who like a well cured
Spanish ham, not too mild but not as intense as a grand
reserva. This ham has an average fat content, a brilliant
white outer layer which compliments the meat inside. Leaving
thin slices at room temperature for 10 15 minutes
will result in this ham sweating which intensifies
its unique flavour. A quality ham for the cheese and wine
enthusiast.

Flavour
notes & gastronomy:
Earthy
hints, intense, textured with medium reserva notes. Enjoy
this ham in two ways depending on your preference either
with lighter flavours such as mild cheeses, young tempranillos
or crianza or go bold and introduce a bossy Priorat accompanied
by mature Manchego cheese and grapes. As a stronger ham
it will do the work so it is best left alone to deliver
its 16 month acquired flavour by itself. Compliments salads
very well and cantaloupe melon perfectly.

Storage:
Store in a cool, dry place. Once cut into your Sagra Especial
ham will last up to 5 weeks, smear extra virgin olive oil
over exposed meat to prevent drying out and cover.
