the rural village of Orce comes this ideal entry level ham,
perfect for lovers of Spanish jamon the paleta
or front leg shoulder boasts all the flavour of the larger
rear leg ham but has a slightly more intense flavour. Although
cured for less time the paleta is thinner than a full ham
so flavour and aroma tends to be more intense. Each shoulder
is chosen to order and tested for maturity prior to dispatch,
full storage and carving instructions are also included. As
a smaller, more economical ham the paleta makes a great gift
from Spain for any occasion and carved thinly will produce
up to 60 tapas servings.

Flavour
notes & gastronomy:
Intense,
ruby, minimum fat, lingers on the palate. Ideal for tapas,
serve in short thin slices with stronger cheeses such as
manchego. Pairs well with full bodied reds and compliments
Spanish recipes, bone makes flavoursome stock.

Storage:
Store in a cool, dry place. Once cut into your paleta shoulder
will last up to 3 weeks, smear olive oil over exposed meat
to prevent drying out and cover. Protective muslin sock
