Fried
Artichokes with Serrano Ham
Artichokes
and Serrano ham are one of those combinations that work
so well that they have been presented as tapas throughout
most bars in Andalucia. Do not let the artichokes put you
off as they are on fact very easy to peel and prepare. For
this simple tapas recipe all you will need is 6 artichokes
and some diced Serrano ham with a lemon and of course the
trusty olive oil. Ideal authentic tapas for the summer or
as a starter.
You
will need:

Artichokes
200g Serrano
ham, diced
1 Lemon
Olive oil
Parsley
Cracked pepper
Method
- Break
off the stems from the artichokes and remove the firmer
outer leaves.
- Cut
the top quarter of the artichoke off then slice the artichoke
heart in half lengthways.
- Slice
the lemon in half and using one half rub all over each
artichoke piece - this will prevent them from turning
black.
- Meanwhile
bring to the boil a pan of salted water.
- Add
the artichokes and simmer for 20 minutes.
- Remove
the artichokes from the pan, place on a sheet of kitchen
towel and press gently to expel any excess water.
- Heat
a good splash of olive oil in a frying pan, add the ham
and artichokes and fry gently for around 10 minutes.
- Serve
garnished with parsley, add pepper to taste and a drizzle
of olive oil.
